Why gluten-free? Well, for those diagnosed with celiac disease, there is no other option but to eat gluten-free foods because of the damage that wheat, barley, rye, and triticale can do the gastrointestinal system of people living with celiac disease.
Over the last decade or so, others have caught on to the benefits of eating gluten-free. Many have reported that their inflammation has improved. Skin blemishes caused by gluten sensitivity have all but disappeared. Some people have reported weight loss as a result of restricting gluten.

Gluten-Free Vegan Banana Muffins
• 3 Bananas
• 1 cup Cauliflower, raw
• 3 Eggs, large (cage-free, preferably)
• 1/2 cup Almond butter
• 1-1/2 cups Almond flour
• 1-1/2 tsp Baking powder
• 1/4 cup Coconut sugar
• 3/4 tsp Sea salt
- Preheat oven to 350 degrees.
- In a blender, combine all the ingredients. Blend until smooth. Pour the batter 3/4 way up in a lined muffin pan.
- Bake for 45 minutes.
